　　资本市场上的故事，张亮团队觉得乏善可陈。而另一家杨国福麻辣烫，对于资本的看法，也是不谋而合。这两个位于麻辣烫行业金字塔塔尖的品牌，目前在全球分别拥有5800和6000家店。
　　“我们认为还没这个必要”，还没想好要不要让资本进来，姜佰东告诉Tech星球，做餐饮我是轻车熟路的，资本的游戏不是很能玩明白。事实上，在姜佰东提到的资本中，不乏投过很多餐饮品牌的龙头机构。
　　市场上一个普遍的规律是，同一个赛道，当有两家品牌分别占据半壁江山后，老三很难生存或打破原有格局。
　　反观麻辣烫的市场，除了张亮、杨国福传统麻辣烫外，以小蛮椒为代表的新式麻辣烫品牌正在奋力奔跑在另一个模式上。截止目前，据天眼查显示，小蛮椒共融资三轮。其中，天使轮投资方‘番茄资本’投过霸蛮米粉、巴奴毛肚火锅、阿甘锅盔等连锁餐饮品牌。
　　和传统麻辣烫品牌不同，小蛮椒是以外卖为切入口，砍掉原有占六成销售额的堂食，打造60平米的店铺模型。据36氪报道，小蛮椒打造的60平米店铺模型，平均日翻台率可达到12次，人均消费26元。
　　张亮麻辣烫联合创始人姜佰东告诉Tech星球，看到一些新品牌的崛起，他们也会内部学习讨论，“一些新的东西我们会学习，看看现在市场的风向，以免固步自封”。
　　新品牌的崛起，并没有影响张亮麻辣烫继续以加盟店的模式，开疆扩土。“如果没有疫情的话，我们打算在海外市场，三年内做到一两百家，现在新加坡等地都还很受欢迎”，姜佰东告诉Tech星球。
　　值得一提的是，张亮麻辣烫的加盟费在省会和一线城市是19800元，其他地区仅为一万元。一位加盟商老板向Tech星球介绍说，开店前会去哈尔滨总部统一培训，怎么熬制汤底，怎么炸辣椒油和麻油等，一周培训结束，就可以上岗了，“除了汤底、辣椒油、麻油，其他都是门店老板自己采购”。
　　相比之下，另一个品牌，杨国福麻辣烫的加盟费更细分，价格更高，对供应链的把控更加严格。
　　杨国福麻辣烫的一位招商经理告诉Tech星球，2018年前，杨国福门店的利润能到45%以上，2018年后利润降到35%，而这10%的利润，主要来自于杨国福对供应链的把控。
　　据红餐网报道，杨国福麻辣烫2018年建立了四川成都研发生产中心，占地48亩，配备调味料研发中心、智能厨房实验中心等，生产的火锅底料和粉料包产品可满足20000家门店的原料供给。
　　“以前做得好，三个月能回本，调料统一供应后，三个季度才能回本”，上述招商经理如是说。
